Happy Monday everyone!! I hope you all had a wonderful weekend. We had some pretty nice weather and I heard that even made it’s way up north?? I hope you were able to enjoy it!
We went on a few walks and even tried to take some pictures outside – although Henry wasn’t really in the mood. Here he is giving me his best celebrity impression while trying to avoid the “Mom”arazzi…you would think I’d get the message.
Can I help that I think everything he does is adorable and picture-worthy? (The answer to that question is probably “yes”…)
Well, the Olympics are officially over. I am so bummed about how it turned out for both the US hockey teams. What a heartbreaking finals for the girls and the boys didn’t even medal?!? :’-(
While there are certain events that I always find myself looking forward to at every Games, it never fails that one random sport will grab my attention and get me completely hooked. Do you ever do that?
(This also happens to me when I’m watching Bravo TV and get sucked into a new Real Housewives marathon…I’m not proud of it, but it happens.)
It usually happened because one of my favorites events that I was watching ended for the day (let’s just say ice dancing) and NBC quickly switched over to another sport before I could change the channel. (They got me every time!) I swear by the time Ryan got home from work, I totally felt like I was proficient on the ins and outs of that event – I knew the lingo, the players, the rivalries…and I found myself acting like I actually knew what I was talking about! hehe
This year, that sport for me was the Skeleton.
I’m sorry, but those people are insane! You can literally touch your chin to the ice, that’s how close they are, and they decide to slide down an icy slope at 80 mph in that position with nothing more than a rubber suit and helmet for protection…ridiculous. But what’s even more ridiculous?? As I’m watching this whole debacle unfold onscreen, I start thinking, “I could totally do that! I mean, if they can…why can’t I?” It’s a testament to how easy these athletes make their sport look because it’s a completely insane notion, but I really start making myself believe it’s possible!
I like to compare it to that Progressive commercial where the husband sees the guy juggling three chainsaws and wants to try it because his insurance has given him a sense of false confidence…”Gimme one, gimme one, gimme one.” Yeah, I’m totally him in this scenario.
Oh well…there’s always 2018.
But back to reality!
This morning I made an egg scramble with ground chicken for breakfast. It was pretty darn good so I wanted to share it!
Ground Chicken Scramble
- 1-2 tsp Coconut Oil
- 2 eggs + 1 egg white
- ½ c spinach, torn
- ½ c Ground Chicken, cooked
- ¼ avocado, mashed
- Salt & Pepper, to taste
Heat non-stick pan over medium heat. Melt coconut oil so it coats bottom of pan. In a cup, combine eggs and spinach and whisk well. Pour into pan and let sit for a bit. Begin to push eggs around to evenly cook. While still a little wet, add in chicken and avocado. Continue stirring until correct consistency is met. Move to plate, season, and enjoy!
